Leftovers: Easy as Pie Eick December 5, 2007 Cooking Having hosted for Thanksgiving, I was left with TONS of leftovers, turkey especially. When I realized I couldn’t eat it all before it went bad, I thought it was time to get creative. So last week I bought some fresh veggies and put together a colorful turkey pot pie with turkey, carrots, celery, onions, red peppers, corn, mushrooms and a bunch of different seasonings. I threw that sucker in the oven then right in the freezer. Now when I’m hungry at home but don’t want to spend a long time preparing something, I just heat up a piece and enjoy me some pot pie! (picture taken before the top crust is added!)
