I have to be honest; I’ve never made grilled tacos before. I’ve stuck to the straight and narrow path of ground beef or ground turkey tacos and added cheese, lettuce, and a little pico de gallo and called it a day. Boy, do I regret doing that for so many years. After making these tacos, I’ll never go back to boring again. They were fresh, hearty, and the homemade grilled salsa….the best. Probably the best salsa I’ve ever made. I loved that everything had the smokiness of the grill but also the brightness of all the different ingredients. It’s also easy for beginners if you’re just getting into the taco scene. Chop the veggies and taco stuffings, char the meat and veggies, add the veggies to the food processor, and make your taco. Anyone with a grill can make these tacos and you can enjoy a great alternative to the traditional (and now lame to me after having these) taco. STEAK TACOS WITH GRILLED SALSA Total Time:30 minutes Number of Tacos: 4 Tacos Ingredients: 8 flour tortillas 1.5 lbs skirt steak (You can use a different cut if you prefer something else) 2 TB (Tablespoon) canola oil Salt and pepper to taste ½ head romaine lettuce, shredded 1 medium red onion, sliced thinly 1 avocado, peeled, pitted, halved then diced 8 ounces sour cream Additional 2 TB canola oil plus more for brushing tomatoes on the grill 2 Serrano chilies 1 small red onion, diced 6 garlic cloves 6 plum tomatoes, halved and seeded Salt and pepper to taste 2 limes juiced ¼ cup fresh cilantro chopped Cook it: Set up your grill so it’s heated to high Wrap tortillas in aluminum foil and place them on the grill (If you have a shelf, it’s best to place them on the shelf in the grill) Brush the steak with olive oil and season with salt and pepper to taste Grill until perfectly cooked to your liking Remove the steak from the grill once it’s cooked to your preferred doneness and let it sit for 5 minutes before thinly slicking it against the grain into ¼ inch thick slices Fill the tortillas with the lettuce, 3-5 pieces of meat, red onion slices, sour cream and avocado (The grilled salsa will be made next and can be place on top of the already-made tacos) Heat the canola oil in aluminum foil on the grill and cook the chilies, onion, and garlic until soft Brush tomatoes with oil and sprinkle with salt and pepper to your liking Grill the tomatoes on both sides until they’re slightly charred and soft Place all the tomatoes and the chile/onion/garlic mixture into a food processor Add the lime juice to the food processor along with some salt and pepper Blend the mixture until smooth then add the cilantro and pulse a few times until there are small pieces Transfer the grilled salsa to your tacos Have a fiesta of homemade grilled steak taco awesomeness in your mouth!
