Beet Quinoa Burgers 2014-04-21 18:43:30 Serves 3 Write a review Save Recipe Print Prep Time 10 min Cook Time 30 min Total Time 40 min Prep Time 10 min Cook Time 30 min Total Time 40 min Ingredients ½ cup quinoa 1 cups water 1 egg, whisked 3 oz feta cheese, crumbled 1/2 onion, finely chopped 2 cloves garlic, minced 1/2 teaspoon sea salt 3 oz fresh beet, grated 2 tbsp fresh parsley, chopped 1/2 cup rolled oats 1 teaspoon olive oil plus 2 tbsp olive oil for frying ground pepper to taste Instructions Place the quinoa in a fine-mesh strainer, and rinse well under cold water. Soak before use for 10 minutes. Drain well and place in a heavy bottom pot. Add 1 cup water and bring to the boil. Cover, simmer and cook for approximately 15-20 minutes or until all the water has been absorbed. Use a fork to fluff up the quinoa. In a medium bowl combine the quinoa, egg, feta cheese,beet, onion, garlic, parsley, oats, salt, pepper. Mix it well. Divide the mixture into six balls. Flatten the balls. Handle them delicately. Heat 2 tbsp olive oil in a large pan. Add the burgers and cook for 5 minutes each side or until golden. Serve with your favorite buns, veggies and toppings.
