Preparing lamb chops, or any meat for that matter is deceptively simple. Take a peace of meat and apply heat to it until it’s done, that’s it. How to apply heat? You can use stove top, oven, grill, slow cooker or open fire at the entrance to the cave like back in the day. When the meat is done? According to the health regulations when inside of the meat reaches 155°F (68°C). Now here comes the tricky part, how to actually do that in order to get tasty juicy tender perfect lamb chops. First thing is seasoning, you could just season it with salt and pepper and cook it right away. But to get really great flavor you should marinate the meat for couple hours. Simple marinade made from lemon, garlic, rosemary, chili flakes, and olive oil will greatly enhance the flavor without overpowering the natural taste of meat. Mix it well and pour it over lamb chops. Next thing is cooking it just right. You want well-browned crust, tender but sufficiently cooked middle and you want to lose moisture as little as possible. Rosemary Crusted Lamb Chops In order to do that in a cast iron skillet you need to preheat it. Cast iron has excellent heat retention properties which makes it excellent for cooking but it needs time to warm up. So when you put your cast iron skillet on the stove top give it time, as a rule of thumb don’t start cooking until skillets handle is to warm to hold with your bare hand. For flipping chops always use grilling tongs. Do not use a fork as it will let out all of the juices you are trying to keep in. And use the “hand test” to determine doneness of your grilled lamb chops. If your lamb chop feel like the base of your thumb it’s medium rare. If your lamb chop feel like the middle of your palm it’s medium. Pour it over the lamb chops and refrigerate for an hour. Heat the cast iron pan over high heat. When is pan hot enough , add 2 tbsp of olive oil and place the chops. Cook for 3-4 minutes. Using a grilling tong, flip the chops, cook for another 3 minutes and remove from the heat. Let it rest for 10 minutes before serving.
