Actually, onion soup is one of my favorite comfort foods. This vegetarian french onion soup recipe is made of just a few basic ingredients but in the end you are getting deeply fragrant and flavorful dish. The key to good onion soup is cooking the onions for a very long time over low heat. It’s not difficult — just do it slowly. And don’t stir onions too often or they won’t caramelize. Originally onion soup is made with yellow onions but I love red onions more. They are little bit sweeter than yellow onions for me. You can use any onions you like, you can’t get it wrong. Vegetarian French onion soup 2014-04-21 19:25:41 Serves 4 Write a review Save Recipe Print Prep Time 15 min Cook Time 1 hr 20 min Total Time 1 hr 35 min Prep Time 15 min Cook Time 1 hr 20 min Total Time 1 hr 35 min Ingredients 4 tablespoons unsalted butter 2 pounds red onions, sliced thinly 1/2 cup white wine 3 cups vegetable stock 1 bouquet of fresh thyme 1 teaspoon sugar salt and black pepper to taste 8 slices of French baguette, ½ inch thicken, toasted 8 oz grated Gruyere cheese Instructions Heat the butter in a large Dutch oven over medium heat. Add sliced onions and immediately reduce heat to low. Cook for 30 minutes, stirring it occasionally, but no too often. Stir in wine and sugar and cook for 30 minutes until the onion base is thick and dark. Add soup and thyme and simmer for 20 minutes. Season with salt and pepper to taste. Remove the thyme and ladle soup into the individual crocks. Top each crock with 2 slices of toasted bread and generously sprinkle with grated cheese. Preheat your oven to broil. Place crocks under the broiler and broil 2-3 minutes or until cheese is melted and bubbly. Serve immediately.
