I’m always trying to nudge my friends and family into eating more healthy. Desserts are often the perfect way to get them eating a little more fruit or vegetables and among the desserts muffins are often the best choices. They are easy to make, portable and combinations are endless. Ones of my favorite healthy muffins are sugar free banana oat muffins. Just like the warm banana bread recipe you enjoyed as a child, these magical muffins will take you on a nostalgic ride. What to do with ripe bananas? Bananas often remain forgotten in the fruit basket. This unattractive, soft, but very sweet fruit that nobody wants to eat are an excellent basis for smoothies, banana bread or muffins. Banana muffins don’t need much to become special. Some cocoa and hazelnuts are enough to transform the humble banana muffins in to delicious treat. Sprinkled with a little chopped hazelnuts makes them much more attractive and adds a crunchy texture. If you are looking for a recipe suitable for novice bakers these tasty muffins are perfect. These are sugar-free because all of the sweetness is derived naturally from the ripe bananas and dried dates. Also adding oats instead of using only plain flour makes them much healthier because of the added fibers in particular beta-glucan which is responsible for the reduction of cholesterol and strengthening of the immune system. Oats also makes them quite filling. These muffins are super moist and flavorful. Together with a glass of milk or a smoothie these sugar-free banana oat muffins are a great breakfast. If by any chance some are left over they will be a great afternoon snack with coffee or tea. You need no more them 15 minutes to prepare them. Let’s not hesitate any longer. Just put the yogurt, dates, coconut oil and bananas in a glass and pure it until smooth with a hand blender and pure until smooth. If you are using blender don’t forget to add liquid to your blender before adding the rest of ingredients as this will prevent the blender blade from getting stuck. Beat the eggs lightly, then stir them into mixture of cocoa, flour, baking powder and oats. Add banana date pure and mix well to combine. Spoon the mixture into the prepared pan and sprinkle with chopped hazelnuts. and bake for 25 minutes. I know, there’s nothing like the smell of freshly baked muffins but you really need to suppress your urge to eat them straight from the oven and let them cool before serving. Put the dates, coconut oil and bananas in a blender and pure until smooth. In a medium bowl combine the flour, oats, baking powder and cocoa. Beat the eggs lightly then stir them into flour-cocoa mixture. Add the banana date mixture and hazelnuts and mix well until combine. Line muffin pan with paper cups. Spoon the mixture into the cups, sprinkle with chopped hazelnuts and bake for 25 minutes. Leave to cool before serving.
